I use Creative Cooks Harissa because it is quite mild, if using a different one you may have to adjust the amount used as they can be quite spicy.
Ingredients for 4 people:
Hurricane Chicken x 4
Medium Leek, sliced down it's length and finely chopped x 1
Garlic cloves, finely chopped x 2
Creative Cook harissa paste (Available from Sainsbury's) x 4tbl spoon
Cumin seed x 1/2 tsp
White wine x 200ml
Mascarpone x 3tblsp
Veg Boullion (or chicken/veg stock) x 1/4 tsp or 1/2 cube
Olive oil x 1.5 tblsp
Salt and Pepper to taste
Heat oven to 160c and then put in your Hurricane Chicken on a tray for 20min. Meanwhile heat olive oil in a large frying pan and put in garlic and cumin, stir and fry until the garlic starts to brown slightly. Add all the remaining ingredients and blend in the harissa and mascarpone. Cook sauce until the leeks start to melt and the sauce reaches a good consistency, this should take about 20 mins. Pour sauce over the Hurricane Chicken and serve with your choice of vegetables and basmati rice....
