Hot smoked trout
Chalk Stream Trout are reared in the world famous gin clear waters of the River Test in Hampshire. Continuously swimming against fast flowing water makes them very lean, and the purity of the water gives them a sensational taste.
We’ve sugar-brined the fillets, always using a fresh brine for each batch, and then hot smoked them in the brick kilns of Chapel and Swan. Toss flakes with buttered Jersey Royals, some curly parsley and a horseradish mayonnaise and you’ll have a fine lunch.
The farmed fish in this product comes from producers inspected to RSPCA welfare standards by the RSPCA’s independently certified farm assurance scheme.
